At plant size the chamber is the easy part; the cycle is decided by ice capacity against shelf area, and by the blast freezer and cooling tower the quote may leave out.

Divide condenser capacity by shelf area. One maker gives 12 L per m², another about 15 kg. A low ratio forces thinner loading.
Two spec sheets state -40 °C and -75 °C. Colder traps suit sugary products and cost compressor power.
Trolley plants expect product frozen outside. No blast freezer in the quote means a missing machine.
Water-cooled condensing needs a tower or chiller. A 20 m² sheet states 93 kW installed, a 50 m² sheet 57 kW: ask what each counts.

In one series the code gives ice litres and shelf m². Other makers' numbers are arbitrary.
