Many low-priced Chinese dumpling machines extrude a dough tube around the filling and press the shape with a mould roller, which is fast but gives a sealed, unpleated dumpling that may not look like yours.

What hides inside the price

Extruded or sheet and fold

Extrusion machines take dough and filling in separate hoppers and form in one pass. Sheet machines roll a wrapper and fold or pleat it, closer to hand-made. Decide which look you need first.

Filling particle size

Filling passes through a pump or screw. Coarse vegetables and large meat pieces can block or smear it. Ask the largest particle the pump takes.

Moulds included

Each shape is a mould roller. Count moulds in the price and ask for a custom mould from your drawing.

Contact materials and cleaning

Filling contains meat and fat. Ask whether every contact part is stainless and strips without tools.
