Sauce processing line from China

Sauce lines fail on texture and stability: a mayonnaise that separates, or a ketchup whose thickness drifts batch to batch, and the machine that decides it is often one line in an offer that spends its pages on the filler.

What hides inside the price
01

Emulsifying or milling principle

Vacuum emulsifier for mayonnaise, colloid mill for smooth pastes, coarse mill for chunky sauces, homogeniser for thin emulsions. Ask which one your recipe was tested on.

02

Cooking vessel

Jacketed kettle with a scraper agitator, heated by steam, thermal oil or electricity. Scrapers keep thick sauce from burning on the wall.

03

Vacuum

Removes air from emulsions so they do not oxidise or foam in the jar.

04

Heat treatment after filling

Hot fill, tunnel pasteuriser, or retort. Set by acidity and target shelf life.

05

Filler

Piston filling for thick sauces with pieces. Ask the nozzle bore against your largest piece.

02

Before you ask for a price.

Send these with the enquiry. Without them, any number a factory gives you is a guess dressed as a quotation.

03

Make a batch of your recipe.Viscosity and particle size inside your specification, measured, and no separation after the agreed hold.
Repeat the batch the next day.Measured viscosity inside your tolerance of the first batch.
Clean kettle and mill as the manual describes.Swabs clean without dismantling beyond what the manual states.

04

The documents that must arrive with it.

The one people forget. Pressure documents for steam-jacketed kettles. A jacket on boiler steam is pressure equipment, and the inspector asks for its file.

01

You make a few hundred jars a week.

A kitchen-scale kettle, or a co-packer.

02

Your sauce is low in acid and must keep at room temperature.

Add a retort sterilizer; hot fill alone will not make it shelf stable.

06

Where the numbers come from.

We name the kind of source, how many and when, and never the factory. Listed prices are asking prices, not landed cost. Where we do not hold a fact we say so: that is a GAP, not an estimate.
